To store carrots, cut off the tops, do not wash them and store them in the vegetable drawer in a cloth or a perforated bag: they last from a few days to a few weeks, then several months in sand in the cellar or up to 12 months in the freezer once blanched.
A bunch of carrots left in the bin for three days, and they bend like rubber. The problem rarely comes from the carrot itself.
It's mainly a matter of water evaporating, leaves pumping it up, and fridge neighbors making it age faster.
The best method depends on what you have and how long you want to keep it. Here's how to choose, with durations taken from several sources, which don't always agree.
Early, seasonal, or storage carrots: the duration depends primarily on the type of carrot
The Ministry of Agriculture distinguishes three categories of carrots (page published in March 2026).
Early carrots, harvested from late May to July, last no more than three days in the vegetable drawer. Main-season carrots follow from July to October. Storage carrots, available from October to March, can be kept for up to a week in the refrigerator.
These times are conservative. Other guides indicate longer storage times for a carrot without its tops: 3 to 4 weeks for La Table de famille (September 2026), approximately 8 weeks for Test-Achats (accessed October 2026).

This difference can be explained by the freshness at the time of purchase, the presence of the tops, washing, and the actual temperature of your refrigerator. Use these figures as guidelines and rely on the firmness of the carrot rather than a calendar.
The table below classifies the methods according to the length of time you want to keep your carrots.
| Target duration | Method | Recorded duration |
|---|---|---|
| A few days | Fresh produce or a bunch with tops, in the fridge | 2 to 3 days |
| 1 to 4 weeks | Storage carrots without tops, in the vegetable drawer | 1 week (ministry) to 3 or 4 weeks (Family Table) |
| Several months | Cave, in slightly damp sand | 2 to 4 months, between 8 and 12 °C (La Table de famille) |
| Up to 12 months | Freezer, after blanching | Up to 12 months |
| Pre-prepared carrots | Peeled in water, grated, cooked | 24 hours to 4 days depending on the condition |
In the refrigerator: chopped tops, unwashed carrots, and good humidity
The first step is to cut off the tops as soon as you get back from shopping. They continue to draw water from the roots, which then dry out and soften.
Keep the soil too: an unwashed carrot keeps better because the soil forms a protective layer, according to the Swiss initiative Save Food Fight Waste (accessed October 2026). Wash them only when you are ready to use them.
Then store them in the vegetable drawer, in a clean cloth, as suggested by La Table de famille and Save Food Fight Waste.
A bag with a hole in it, which lets out excess moisture, is the other option, described in the Équiterre storage guide, which nevertheless advises cleaning the carrots beforehand.
ℹ Note: Keep them away from apples, pears and potatoes, which release ethylene, a gas that makes carrots old and bitter according to Test-Achats, as well as tomatoes according to Save Food Fight Waste.
Typical example: you come home from the market with a bunch of new carrots for the week. Cut off the tops that same evening, put them in a tea towel in the vegetable drawer and plan to cook them within three days, the limit given for this type of carrot.

In the cellar, in the sand: the method for large harvests
Without a refrigerator available, or with a vegetable garden harvest to store, sand remains the classic method. It keeps carrots moist, and therefore firm, for several months.
Here are the steps, according to La Table de famille and Croq'Kilos (May 2025):
- Choose storage carrots, unwashed, with the tops cut off.
- Spread a layer of slightly damp sand at the bottom of a ventilated box.
- Place the carrots without them touching, then cover them with sand.
- Repeat layer by layer and store the crate in a cool, dark, and frost-free place.
On Reddit (r/Cooking, April 4, 2023), a user writes in English that damp sand is the best way to store carrots.
According to him, those from his garden, left in a box with a little soil, last "a solid 6 months", or a good six months.
⚠ Note: This is an individual account, and the 2-4 month durations mentioned above apply to a cellar between 8 and 12°C. Without such a cool environment, the refrigerator or freezer remains simpler.

Freezing carrots: blanch to retain texture
Frozen raw and unprepared carrots are not recommended: the water they contain forms crystals that damage the cells, and they come out soft and tasteless, according to Croq'Kilos (April 2025).
They must therefore be blanched, that is to say, briefly plunged into boiling water:
- Peel the carrots and cut them into rounds or sticks.
- Plunge them into boiling water for 2 to 3 minutes.
- Immediately plunge them into an ice bath, then dry them thoroughly.
- Spread them out on a baking sheet and freeze for about an hour.
- Put them in a bag, removing as much air as possible, and note the date.
These steps follow the Croq'Kilos freezing guide (April 2025). Health Canada (page updated March 31, 2026) gives the same principle, with 2 to 5 minutes of blanching depending on the vegetable.
Health Canada states that frozen carrots can be stored for up to 12 months, as does Croq'Kilos on its page dedicated to freezing (although its storage guide suggests 8 to 10 months). Frozen carrots can be added directly to soups, stir-fries, or stews like potato, carrot, and onion casseroles, without thawing.
✓ In practical terms: raw grated carrots can be frozen without blanching, in small portions, for soups or savory cakes. They are no longer suitable for a salad, as they become softer.

Peeled, grated or cooked: store pre-prepared carrots
A peeled or cut carrot loses its natural protection. It can be kept for 4 to 5 days in the refrigerator in an airtight container filled with fresh water, which should be changed every two days.
Grated, it only keeps for 24 hours in an airtight container, and a little lemon juice limits oxidation. These guidelines come from Croq'Kilos (May 2025).
⚠ Warning: a trick using a jar of water promises a month of preservation. According to Le Tribunal du Net (August 27, 2021), it involves cutting carrots into two or three pieces and placing them in a jar half-filled with water in the refrigerator, but the article specifies that it doesn't always work, as some internet users have seen their carrots spoil.
Therefore, keep 4 to 5 days in mind as a safe benchmark, and consider a month as the maximum time to test.
Cooked carrots should be treated like any other leftover. Health Canada ( infographic on leftovers , updated September 2024) recommends 3 to 4 days in the refrigerator at 4°C for a cooked dish containing vegetables, and 2 to 3 days for soup.
Steamed or sautéed, they freeze well, according to Croq'Kilos (April 2025), just like a puree of carrots and potatoes, to be frozen in individual portions.

Soft carrots: to salvage or to throw away?
A soft carrot without mold is simply dehydrated. It remains edible and makes a great soup or purée, according to La Table de famille.
To firm it up, soak it in cold water: the same source indicates 30 minutes, and Save Food Fight Waste suggests placing it in a glass with a little water.
✓ To do: before throwing it away, check for three signs identified by Save Food Fight Waste: mold, a putrid smell, a pasty or overly rubbery texture. If any of these signs are present, it's best to throw it away.
Don't forget the tops either: the Ministry of Agriculture reminds us that they add flavor to soups and broths.

In summary
For a few days to a few weeks, cut off the tops, keep the carrots unwashed and store them in the vegetable drawer, away from apples and pears.
For several months, choose sand in the cellar if you have a place between 8 and 12 °C, or the freezer after 2 to 3 minutes of blanching.
A peeled, grated or cooked carrot can be eaten quickly, and a soft carrot without mold can still end up in soup.
