The recipe for tarte flambée: a gourmet version of the Alsatian flammekueche revisited as a dessert with caramelized apples, vanilla cream and a thin crispy pastry.

  • 200 g of flour

  • 1 pinch of salt

  • 2 tablespoons of neutral oil

  • 8 cl of lukewarm water

  • 3 apples

  • 150 ml of thick fresh cream

  • 2 tablespoons of sugar

  • 1 teaspoon of vanilla extract

  • 20g of butter

  • 1 tablespoon of brown sugar

  • 1 pinch of cinnamon

Preparation steps

  • Mix the flour and salt in a bowl. Add the oil and lukewarm water, and knead until you obtain a smooth dough. Let it rest for 15 minutes under a tea towel.
  • Meanwhile, peel the apples and slice them thinly. Sauté them in butter with brown sugar and cinnamon for 8 minutes until golden brown.
  • Preheat the oven to 250°C. Mix the cream with the sugar and vanilla extract.
  • Spread the dough as thinly as possible on a baking sheet lined with parchment paper. It should be almost transparent.
  • Spread the vanilla cream evenly over the entire surface of the pastry, leaving a small border.
  • Distribute the caramelized apples over the cream.
  • Bake for 10 minutes until the edges are golden and crispy.
  • Serve immediately, cut into rectangular pieces like a real flammekueche.
