I discovered this sweet version of tarte flambée during a stay in Alsace, in a small winstub where the chef offered this creation at the end of the meal.
The idea immediately appealed to me: to keep the spirit of the traditional flammekueche with its thin and crispy dough, but to transform it into a gourmet dessert!
This sweet tarte flambée perfectly combines caramelized seasonal apples with a smooth, vanilla-scented cream. The pastry, rolled out very thinly like the savory version, becomes deliciously crisp in the oven. It's a dessert that surprises and delights my guests every time.
You can adapt this recipe to your liking: replace the apples with pears in the autumn, add some chopped walnuts for crunch, or flavor the cream with cinnamon. The important thing is to maintain that characteristic delicate texture that gives tarte flambée its charm.
This recipe is easy to prepare and cooks quickly, perfect for an impromptu dessert that's out of the ordinary. You'll see, your guests will be surprised by this sweet interpretation of a great Alsatian classic!

Ingredients
200 g of flour
1 pinch of salt
2 tablespoons of neutral oil
8 cl of lukewarm water
3 apples
150 ml of thick fresh cream
2 tablespoons of sugar
1 teaspoon of vanilla extract
20g of butter
1 tablespoon of brown sugar
1 pinch of cinnamon
Preparation steps
- Mix the flour and salt in a bowl. Add the oil and lukewarm water, and knead until you obtain a smooth dough. Let it rest for 15 minutes under a tea towel.
- Meanwhile, peel the apples and slice them thinly. Sauté them in butter with brown sugar and cinnamon for 8 minutes until golden brown.
- Preheat the oven to 250°C. Mix the cream with the sugar and vanilla extract.
- Spread the dough as thinly as possible on a baking sheet lined with parchment paper. It should be almost transparent.
- Spread the vanilla cream evenly over the entire surface of the pastry, leaving a small border.
- Distribute the caramelized apples over the cream.
- Bake for 10 minutes until the edges are golden and crispy.
- Serve immediately, cut into rectangular pieces like a real flammekueche.
