What gourmet Easter starter should I choose to match the main course?

The most useful rule is that of contrast: the richer the main course, the fresher and lighter the starter should be. With a leg of lamb or a roast, a seafood or vegetable starter works better than a creamy puff pastry.

Conversely, before a fish course, it is better to start with eggs, asparagus or a vegetable starter rather than a second seafood course.

ℹ Note: For a meal with a pregnant woman, raw or smoked fish is not recommended according to health guidelines. Instead, consider a starter such as beetroot velouté or carpaccio, with pasteurized cheese. Asparagus is also a good choice, with a hard-boiled egg rather than a soft-boiled one.

Asparagus and eggs: the seasonal duo

Asparagus arrives in France as early as the end of March and remains on the shelves until June, which is convenient for Easter falling between the end of March and April. For a starter, allow 4 to 6 asparagus per person, depending on the size of the tips (750g, March 2025).

1. Green asparagus, soft-boiled egg, parmesan cheese and hazelnuts

Green asparagus cooks quickly: 3 to 5 minutes in boiling salted water, 6 to 8 minutes steamed, according to the same source. Then plunge them into ice water to preserve their color.

Soft-boiled eggs require about 6 minutes 30 seconds in simmering water, then a cold bath before being peeled. Cut them at the last minute so the yolks coat the asparagus.

Finish with Parmesan shavings, crushed hazelnuts, and a drizzle of lemon-infused olive oil. The vinaigrette is prepared the day before, the asparagus is cooked in the morning and served warm or cold.

⚠ Note: White asparagus requires more work. It needs to be peeled along its entire length and cooked for 12 to 15 minutes in water, which makes it suitable only for those who have the time on the day.

2. Deviled eggs with smoked salmon

The classic Easter dish is served in a slightly more dressed-up version: mash the yolks of six hard-boiled eggs with a spoonful of mayonnaise and chives, fill the whites, then place a rolled-up slice of smoked salmon on top.

The eggs can be cooked and peeled the day before, then kept refrigerated in a sealed container. Garnish only when ready to serve, otherwise the whites will soften.
