I make these oatmeal and banana waffles when I want something comforting, but without going for the "fairground dessert" waffle which is often ultra-sweet.
The ripe banana provides softness and natural sweetness, and the oats give a slightly rustic texture that I love: it's slightly crunchy on the outside, and remains tender on the inside.
I started with a very classic waffle batter base (eggs, milk, flour, baking powder, a little butter), then I added rolled oats and mashed banana. The little detail that makes all the difference: letting the batter rest just long enough for the oats to absorb the liquid.
As a result, the batter thickens, it runs less in the waffle iron, and the waffles come out more even and fluffy!
For a seasonal touch, I like to serve them with a quick apple (or pear) compote and a handful of walnuts. It keeps things simple, doesn't complicate the recipe, and makes a perfect accompaniment: fruity, meltingly tender, with a bit of crunch.
You can eat them for breakfast, brunch, or even as a light meal with a yogurt on the side. And if you prepare them in advance, they can be toasted for 2 minutes to regain their crispness.

Ingredients
2 2 ripe bananas (approx. 120g each with the peel, approx. 100g of flesh per unit)
150g of oat flakes
120g of wheat flour (T45 or T55 )
2 eggs
35g of melted butter (+ a little extra for greasing the waffle iron )
320 ml of milk
10 g of baking powder
1 pinch of salt
1 teaspoon of vanilla extract (optional but nice)
2 apples (approx. 150g each) to serve
40g of walnuts (or hazelnuts) to serve
1 tablespoon of lemon juice (for the apples)
Preparation steps
- Peel the bananas and mash them with a fork in a large bowl. Keep some texture; it's okay if there are still small pieces.
- Add the eggs, milk and melted butter. Whisk just until combined.
- Incorporate the flour, baking powder and salt. Mix gently: as soon as there are no more large lumps, it's ready.
- Add the oat flakes (and vanilla if you're using it). Mix, then let it rest for 8 minutes: the oats will absorb some of the liquid and the dough will thicken.
- While the salad rests, prepare the side dish: peel the apples and dice them. Place them in a small saucepan with the lemon juice and 2 tablespoons of water. Cook over medium heat for 9 to 11 minutes, stirring occasionally, until soft. Keep warm.
- Roughly chop the walnuts. Toast them for 2 to 3 minutes in a dry pan, just to bring out the aromas. Set aside.
- Preheat the waffle iron. Lightly grease the plates. Pour in a ladleful of batter (don't overfill, the batter will rise). Cook for 3 to 4 minutes, depending on your appliance, until golden brown.
- Serve immediately with the soft apples and toasted walnuts. If you're waiting, place the waffles on a wire rack (not a plate) to keep them crisp.
